Basic Sandwich Bread



Ingredients:
1 Cup warm waster
2 teaspoons quick rising yeast
2 tablespoons sugar
1/4 cup oil
3 cups flour
1 1/2 teaspoons salt

Directions:
Pour warm water in a bowl, add sugar and yeast and let sit for 10 minutes. Slowly stir in flour and salt until dough pulls from the sides of bowl. Lightly flour counter and knead dough for 5-7 minutes. Clean and grease your bowl.
Form the dough into a ball and put into the greased bowl, turning to grease all sides of the dough. Cover with a damp clean dishtowel and let rise until it doubles its size, about 1 to 2 hours.
Punch down the dough with fist and knead for a minute or so to work out the air. Pat dough into a square and roll into a log, place into a bread pan and let rise in a warm oven for 30-40 minutes.
Bake in preheated oven (350) for 35 minutes.
If you want a soft crust; brush loaf with melted butter half way through cooking time and again when bread is done.
If you want a honey wheat loaf you can substitute half of the white flour for wheat and replace the sugar with honey. You can also replace the oil with butter. You can play with the ingredients to make a custom loaf. If you have a bread machine follow these instructions:
Proof the yeast by adding the warm water, sugar and yeast in your bread machine pan for 10 minutes then add all the remaining ingredients. Set on dough setting. When machine is done take out dough and pat into a square and roll into a log, place into a bread pan and let rise in a warm oven for 30-40 minutes.
Bake in preheated oven (350) for 35 minutes. If you want a soft crust; brush loaf with melted butter half way through cooking time and again when bread is done. 
Note: You could just follow the first part of the directions and cook bread in your bread machine but I don't think the bread is as light and soft as in could be if you cooked it in the oven :)

Chicken and dumplings

When people talk about comfort food they always talk about chicken and dumplings. I never thought that! For a couple reasons. I never ate it before and It seemed like such a mainland food. When I decided to make this I looked up a couple recipes and they all use stuff like condensed cream of celery or cream of chicken soup, and Bisquick batter. The thought of chicken soaked in canned soup topped with pancake batter made me sick. I thought chicken and dumplings were old school food? Before processed food was even made? So I came across an old recipe tweaked it and came out with an awesome dish. This is a little time consuming for people now days. I have no life so I can stay home all day and cook. To make this faster you could use chicken thighs and store bought broth. But i wouldn't :)

Ingredients:
1 roasting chicken about 5 to 6 pounds
1 large onion chopped, (for the stock)
3 bay leaves
6 tablespoon butter
6 tablespoon flour
3 teaspoons fresh thyme
2 tablespoon cooking sherry
4 celery stalks cut into 1/2-inch pieces
4 medium carrots, peeled and cut into 1/2-inch pieces
1 large onion quartered
1/4 cup heavy cream
1 cup frozen peas, thawed
1/4 cup minced fresh parsley leaves
Ingredients for Dumplings:
2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
2 Tbsp butter, melted
3/4 cup milk
1/4 cup minced herbs (parsley, sage, and thyme) or whatever floats your boat. Make sure you use fresh herbs not dried.

Directions:
First things first, We need to cut up this bird. Cut off legs, thighs and breasts, remove the skin and set aside. Next we need to hack up whats left over into 2 inch pieces for the stock.
Heat some olive oil in a heavy bottom pot on medium high heat. Add hacked up chicken pieces (back, neck, and wings) and onion. Cook until onions soften and chicken pieces brown, about 5 minutes. Turn heat to low, cover and continue to cook for about 20 minutes. In a tea kettle or separate pot, boil 6 cups of water. Add boiling water to chicken pan and turn heat to medium high.
Add chicken , 3 bay leaves, and 3/4 teaspoon of salt to the stock and bring up to a simmer. Reduce heat and simmer, partially covered, until the chicken is  just cooked through, about 20 minutes. Remove chicken legs, thighs, and breasts from the pan and set aside. When chicken is cool enough to handle, debone the chicken pieces. Shred and cut into bite size pieces.
Next you need to strain the broth and discard all the solids and bay leaves. Skim off any fat from the broth and reserve 5 cups for the dish. Freeze any left overs for later use.
For the dumpling batter. sift together flour, baking powder, and salt in a bowl. Add herbs. Add melted butter and milk to the dry ingredients. Gently mix with a spoon until mixture just comes together. Making sure not to over mix or you batter will be too dense. Set aside.
Next; heat 6 tablespoons butter in the pan you used to make the stock over medium-high heat. Whisk in flour and thyme, whisking constantly until flour turns golden, 1 to 2 minutes. Whisking constantly, slowly add sherry, then slowly add the 5 cups stock, cook until mixture slightly thickens, 2 to 3 minutes. Stir in the carrots, celery, and onions; cook for 5 minutes. Stir in chicken and cream; return to a strong simmer. Season with salt and pepper and cover to cook 5 minutes.
After the 5 minutes drop the dumpling batter into the stew by heaping teaspoonfuls, over the surface of the stew. Cover and simmer until dumplings are cooked through, about 15 minutes. (I know its tempting but make sure you don't uncover the pot! The dumplings need steam to cook) Check the dumplings in 15 minutes. If there still not done cover and let it cook for another 5 minutes.
When dumplings are done take them out and put them on a plate. Stir in the peas and parsley and warm them through.
Scoop stew into bowls and add dumplings on top.

Banana Bread

Ingredients:
2 Cups flour
3/4 teaspoons baking soda
1/2 teaspoons salt
3/4 cup sugar
6 tablespoons butter softened
2 large eggs
2 cups mashed over ripe bananas (about 5 large)
1/2 cups chopped walnuts or chocolate chips (optional)
1/4 cup water

Directions:
Preheat oven to 350. Grease and flour 9" by 5" baking pan. Combine flour, soda, and salt in small bowl. In mixing bowl beat sugar, butter, and eggs just till blended. Increase speed to high and beat 5 minutes until light and creamy. Reduce speed to low and add bananas and water, beat until well mixed. Slowly add flour mixture to wet mixture, mix just until blended. (stir in walnuts now if using) Spoon batter into loaf pan. Bake for 50 to 60 minutes until toothpick inserted to center of bread comes out clean.Cool completely on wire rack.

Note: Don't over stir once dry ingredients are in or you'll get a dry and dense loaf... 
You can also add chocolate chips to the batter instead of walnuts

French Bread

Ingredients for 1 1/2 pound loaf:
1 cup water
1 1/2 teaspoon salt
3 cups flour
2 teaspoons active dry yeast

Directions for bread machine:
Place all ingredients into bread pan select dough setting and start. When machine stops shape dough into long baguette of 6 french rolls. Dust top with a little flour; rub it in. Place loaf on a cookie sheet dusted with cornmeal. Slash the tops of the rolls or baguette about 1/2 inch deep. Cover and let rise in warm area for 30 to 45 minutes until doubled.
Place a pan of hot water on the bottom rack in oven. (this is for a crisp crust)  Preheat oven to 450 and bake for 15 to 20 minutes.

Quick Herb Biscuits

Ingredients:
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoon salt
1 cup milk (or buttermilk if on hand)
2 tablespoons mayo
1-2 teaspoon fresh herbs of your choice (thyme and sage work well)

Directions:
Preheat the oven to 400 degrees. Grease 12 muffin tins. Whisk together the flour, baking powder, and salt. In separate bowl mix milk, mayo, and herbs. Stir wet ingredients into dry with a fork, making sure not to over stir. Scoop dough evenly into muffin cups. Bake for 15-20 minutes until golden brown and toothpick inserted comes out clean.

Garlic and Herb Monkey Bread

 For the Bread Machine.........

Ingredients for dough:
1/2 Cup water
1/2 Cup Sour cream
3 Cups all propose flour
1 1/2 teaspoon salt
2 tablespoon Butter
3 tablespoon Sugar
1 1/2 teaspoons active dry yeast
Garlic and Herb mix:
4 tablespoons melted butter
2 minced garlic cloves
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon marjoram
*Note: If you don't have fresh herbs use 1/4 teaspoons of dried herbs....
Directions:
Add all dough ingredients to bread machine and put on dough setting. When finished turn dough out on to  a lightly floured counter top. Roll dough into a 2 foot rope.
In a bowl combine melted butter garlic and herbs.
Cut dough into 40 small pieces, then dip each piece in the herb and butter mixture.
Layer pieces into a buttered 9 inch round pan. Let rise in a warm oven for 30 to 45 minutes until doubled.
Bake in a 375 degree oven for 15 to 20 minutes until brown.

Pita Bread

For a 1 1/2 pound batch.

Ingredients:
1 1/8 cup water
3 cups all-purpose flour
1 tsp salt
1 tbs oil
1 1/2 tsp sugar
1 1/2 tsp active dry yeast

Directions:
Add all ingredients to the bread pan and select the dough setting for your machine.
When dough is done turn it out to a lightly floured counter top. Roll out to a 12 inch rope then divide into 8 pieces. Roll each out into a smooth ball. With a rolling pin, roll each ball into a 7 inch circle. Set aside on a lightly floured counter top and keep in covered with a towel. Let them rise for about 30 minutes.
Place rack to the middle of oven. Preheat to 500. Place 3 pitas on a wire cake rack then place directly on oven rack. Bake for 4 to 5 minutes until puffed and tops are beginning to brown. Remove from oven and cover with a damp kitchen towel until soft. Store in a zip-lock bag in the fridge.

Skillet Corn Bread

Ingredients:
1 1/4 cups flour
1 1/4 cups yellow cornmeal
1 tbs baking powder
2 tsp sugar
1 cup milk
2 large eggs
1 8oz can cream corn
4 tbs melted butter

Directions:
Preheat oven to 425. Grease 10 inch cast iron skillet.
In a large bowl mix flour, cornmeal, baking powder, sugar, and salt.
In medium bowl whisk together milk, corn, eggs, and butter. Stir wet mixture into dry mixture just until combined. (don't over mix)
Pour batter into skillet and bake 25 to 30 minutes.
Serve warm!

Sweet Bread




Ingredients:
1 cup milk
1 large egg + 1 egg yolk
2 tbs butter
1/2 cup sugar
3/4 salt
3 cups bread flour
2 1/2 tsp dry yeast

Directions:
Warm the milk to about 110 degrees then add the sugar and the yeast don't mix, let sit for about 15 min.
In a large bowl mix dry ingredients. Make a well in the flour mixture and then add the wet ingredients. The dough will be very sticky.
After mixing, cover and let it sit in the bowl to rise 1-2 hours. Punch down then put into a round cake pan to rise again. Bake at 375 for 30-35 minutes.


Pizza Dough






Makes enough dough for two 10-12 inch pizzas

Ingredients
1 1/2 cups warm water (105°F-115°F)
1 package (2 1/4 teaspoons) of active dry yeast
3 1/2 cups bread flour
2 Tbsp olive oil
2 teaspoons salt
1 teaspoon sugar

Directions:  
In the large bowl add the warm water. Sprinkle on the yeast and let sit for 5 minutes until the yeast is dissolved. Stir to dissolve completely if needed at the end of 5 minutes.
Attach a mixing paddle to the mixer. Mix in the olive oil, flour, salt and sugar on low speed for about a minute. Remove the mixing paddle and replace with a dough hook. Knead using the mixer and dough hook, on low to medium speed, until the dough is smooth and elastic, about 10 minutes. If you don't have a mixer, you can mix and knead by hand. If the dough seems a little too wet, sprinkle on a bit more flour. Place ball of dough in a bowl that has been coated lightly with olive oil. Turn the dough around in the bowl so that it gets coated with the oil. Cover with plastic wrap. Let sit in a warm place (75-85°F) until it doubles in size, about 1 to 1 1/2 hours (or several hours longer, a longer rise will improve the flavor). If you don't have a warm spot in the house you can heat the oven to 150 degrees, and then turn off the oven. Let the oven cool till it is just a little warm, then place the bowl of dough in this warmed oven to rise.

Dinner Rolls

Ingredients:
3/4 Cup tap water
1 large egg
3 cups bread flour
1 tsp salt
3 tbs sugar
6 tbs butter
2 tbs dry milk
2 1/2 tsp dry yeast
1 large egg beaten for brushing on top.

Directions:
Throw all ingredients into bread pan in the same order there layed out. According to your machine directions put in on the dough setting.
When beeper goes off place dough on a board and squeeze out the gas.
Divide into 20 or so balls. Cover with a damp washcloths and let sit for 20 minutes.
Roll out ball into a wedge shape. Starting with the widest side, roll up the wedge loosely towards the point.
Place on a greased baking pan with the point downward. Spray with water lightly. Let rise until almost double in size, about 30 or 40 minutes.
Brush rolls with the beaten egg and bake in a 350 oven for 10 to 15 minutes until golden brown.

Butter Biscuits


This is such an easy recipe for the kids. The boys had fun making it and with ingredients that you have in the house its so fast.

Ingredients:
2 Cups all purpose flour
1 tbs baking powder
1/2 tsp salt
1/4 cup (1/2 stick) cold unsalted butter, cut into small pieces
3/4 cup milk

Directions:
Preheat oven to 400. In a large bowl combine flour, baking powder, and salt. Using a pastry blender or 2 knives, cut the butter into the flour mixture until the mixture resembles coarse crumbs.
Using a fork, stir in the milk until a soft dough forms. Gather the dough into a ball. Place the dough on a jelly roll pan. Press it evenly into a rough 6- x 6 inch square.
Using a spatula or the dull side of a knife cut the dough into 12 biscuits without completely separating them.
Bake for15 to 20 minutes or until light gold color. Transfer pan to a cooling rack and cool for 10 minutes. Serve warm.

You can add 2 tbs Parmesan cheese, 1/2 tsp dried basil, and 1/4 tsp dried oregano into the dry mixture for a side to a spaghetti dinner.

Old Fashioned Sticky Buns

This recipe may seem overwhelming at first but it's well worth the time. It's so good. My husband highly recommends it! :)Prep takes  a little over an hour
Ingredients:
2 packages quick dry yeast
2/3 cup granulated sugar
2 tablespoon salt
2 teaspoons ground cardamom (optional)
About 7 ½ cups all purpose flour
1 ¾ cups milk
1 cup plus 2 tablespoons butter
3 large eggs
2 cups walnuts (8 ounces) chopped
1 ½ golden raisins
1 ½ cups packed dark brown sugar
2 tablespoons corn syrup
¾ cup confectioners sugar

Directions:
In a large bowl combine first 4 ingredients and 3 cups flour. In a saucepan, heat milk and 6 tablespoons butter over low heat until very warm (120 to 130 degrees) butter might not melt completely(that’s ok don’t over cook it just to melt the butter)
With mixer at low speed gradually beat liquid into flour mixture just until blended, scraping bowl often. Beat in eggs. Increase speed to medium and beat 3 minutes. With spoon, stir in 4 cups flour to make a soft dough.
Turn dough on to lightly floured surface; knead about 10 minutes, until smooth and elastic, working in about half cup more flour. Shape into ball. Cover loosely with plastic wrap; let rest 15 minutes. Meanwhile, prepare filing: In 1-quart saucepan , melt 6 tablespoons butter over low heat; set aside. In medium bowl, mix walnuts, raisins, and 1 cup brown sugar. Grease 17 inch by 11 ½ inch roasting pan.
Cut dough in half. On lightly floured surface, with a floured rolling pin, roll half of dough into 18 inch by 12 inch rectangle. Brush dough with half of melted butter; sprinkle with half of filling. Starting from a long side, roll dough jelly-roll style; pinch seam to seal. With serrated knife. Slice roll crosswise into 10 pieces. Repeat with remaining dough, butter and filling. Arrange buns, cut-side down. In roasting pan. Cover loosely with plastic wrap; let rise in warm place (80 to 85 degrees) for about 30 minutes, until doubled.
Preheat oven to 350 and bake 25-30 minutes, until buns are golden and sound hollow when lightly tapped with fingers.
Prepare glaze: In 1 quart saucepan, heat corn syrup, ½ cup brown sugar, and 6 tablespoons butter over medium heat until butter is melted and sugar is completely dissolved; spoon over hot buns. Cool buns in pan on wire rack. When buns are cool, in small bowl, mix confectioners sugar and 1 tablespoon water until smooth: with spoon, drizzle icing over buns.
